Ingredients

Scale

For the Apple Mixture

  • 2 cups peeled and diced apples
  • ¼ cup brown sugar (packed)
  • 1 teaspoon ground cinnamon

For the Biscuit Coating

  • ¾ cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 32 ounces refrigerator biscuits (2 packs)

For the Sauce

  • ½ cup butter (melted, 1 stick)
  • 1 cup brown sugar (packed)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 12-cup bundt pan thoroughly with non-stick cooking spray to ensure the monkey bread doesn’t stick.
  2. Mix Apples: In a small bowl, combine the peeled and diced apples with ¼ cup of brown sugar and 1 teaspoon of ground cinnamon. Set this mixture aside to marinate and infuse the apples with flavor.
  3. Prepare Cinnamon Sugar Coating: In a large mixing bowl, whisk together ¾ cup granulated sugar and 2 teaspoons ground cinnamon until evenly mixed.
  4. Cut and Coat Biscuits: Open both packs of refrigerator biscuit dough and cut each biscuit into 4 pieces. Toss these biscuit pieces in the cinnamon sugar mixture until they are well coated, ensuring every bite has sweetness and spice.
  5. Layer Ingredients in Bundt Pan: Spoon about a third of the cinnamon-sugar coated biscuit pieces into the bottom of the bundt pan. Add a third of the apple mixture over the biscuit pieces. Continue layering biscuit pieces and apples in thirds until all ingredients are used.
  6. Make and Pour Sauce: In a small bowl, mix together the melted butter, 1 cup brown sugar, and 1 teaspoon vanilla extract until combined. Pour this sauce evenly over the layered biscuit and apple mixture in the bundt pan.
  7. Bake the Monkey Bread: Place the bundt pan in the preheated oven and bake for 50-60 minutes. Check at about 45 minutes; if the top is browning too quickly, cover it loosely with aluminum foil for the remaining time to prevent burning.
  8. Cool and Serve: After baking, let the monkey bread cool in the pan for 10 minutes. Then carefully invert the bundt pan onto a serving plate to release the bread. Serve warm for the best gooey, tender texture.

Notes

  • If apples are very juicy, pat them dry slightly to avoid soggy bread.
  • Use Granny Smith or Fuji apples for a good balance of tartness and sweetness.
  • The biscuit dough can be substituted with homemade biscuit dough if preferred.
  • Make sure to grease the pan well to ensure easy removal.
  • Leftovers can be reheated gently in the microwave or oven for a warm treat.
