Instructions

  1. Prepare the Apples: Core, peel, and slice your apples to yield 2 pounds of sliced apples. This ensures you have the right quantity for cooking.
  2. Cook the Apples: Place the sliced apples and water in a large, heavy-bottomed pot or Dutch oven. Cover and bring to a boil. Cook for 8 to 10 minutes until apples become tender, stirring frequently to prevent sticking.
  3. Drain Excess Water: After cooking, you should have about 4½ cups of cooked apples. Drain any remaining excess water if necessary, as most will have evaporated during cooking.
  4. Add Sugar and Butter: Add sugar and butter to the pot with the cooked apples. Stir constantly and bring the mixture to a full rolling boil over high heat.
  5. Add Pectin and Boil: Stir in the liquid pectin and continue boiling for one more minute, stirring constantly to activate the pectin properly.
  6. Remove Foam and Add Spices: Remove the pot from heat. Skim off any foam using a spoon to ensure a clear jam. Gently stir in the apple pie spice, taking care not to break up the apple slices.
  7. Prepare Jars and Fill: Ladle the hot jam into 6 or 7 sterilized half-pint canning jars, leaving a ¼-inch headspace. Remove any air bubbles by running a non-metallic spatula around the jar. Wipe rims clean and apply lids and bands fingertip tight.
  8. Process the Jars: Process jars in a boiling water bath canner for 10 minutes. Turn off heat and let jars sit in hot water for an additional 5 minutes before removing.
  9. Cool and Store: Allow jars to cool completely. The jam will firm up as it cools. Store sealed jars in a cool, dark place and enjoy slathered on buttered toast or warmed and served over vanilla ice cream.
