Instructions

  1. Preheat Oven: Turn on the oven to the broiler setting on high to prepare for baking the eggs.
  2. Melt Butter and Cream: Transfer the heavy cream and butter to a ramekin and place it in the oven for 2 minutes until the butter has melted and blended with the cream.
  3. Add Cheeses: Drizzle half of the goat cheese and half of the parmesan cheese over the butter-cream mixture in the ramekin.
  4. Place Eggs: Carefully break the eggs on top of the cheese mixture, keeping the yolks intact for a creamy texture.
  5. Add Herbs and Remaining Cheese: Sprinkle half of the chopped herbs over the eggs, then drizzle the remaining goat and parmesan cheeses on top.
  6. Bake Eggs: Place the ramekin back in the oven and bake for about 8 minutes, or until the egg yolks are cooked to your liking.
  7. Finish and Serve: Remove the ramekin carefully as it will be hot, sprinkle the remaining herbs on top, and let cool slightly before serving. It’s best served on a wooden board or plate to handle the heat.
