Ingredients

Scale

Protein & Dairy

  • 1 lb boneless, skinless chicken breast or thighs, diced
  • 1 (5.2 oz) package Boursin garlic & herb cheese
  • 1/4 cup grated Parmesan cheese (optional)

Vegetables

  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 cup baby spinach
  • Fresh basil or parsley, for garnish

Pantry Staples

  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 cup uncooked orzo
  • 2 1/4 cups chicken broth

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the dish.
  2. Cook Chicken: Heat olive oil in a large oven-safe skillet or baking dish over medium heat. Add the diced chicken, season with salt and pepper, and cook until browned on all sides. Remove the chicken from the pan and set aside.
  3. Sauté Garlic and Orzo: In the same pan, add the minced garlic and toast it for about 30 seconds until fragrant. Stir in the uncooked orzo pasta and toast for 1 minute to add a nutty flavor.
  4. Add Broth and Veggies: Pour in the chicken broth and bring it to a simmer. Stir in the diced zucchini and halved cherry tomatoes. Nestle the Boursin cheese in the center of the pan for melting.
  5. Return Chicken and Bake Covered: Place the browned chicken back into the dish and mix slightly to combine. Cover the skillet or baking dish with foil and bake in the preheated oven for 20 minutes.
  6. Add Spinach and Parmesan: Remove the foil, stir in the baby spinach and optional grated Parmesan cheese. Return the uncovered dish to the oven and bake for an additional 5–10 minutes until the orzo is tender and the dish is creamy.
  7. Garnish and Serve: Finish by garnishing with fresh basil or parsley. Serve hot for a delicious, creamy baked dinner.

Notes

  • For a vegetarian version, omit the chicken and use vegetable broth instead of chicken broth.
  • The Parmesan cheese is optional but adds extra richness and depth of flavor.
  • Use an oven-safe skillet or transfer to a baking dish to ensure even cooking and easy baking.
  • Feel free to swap in other vegetables like bell peppers or mushrooms based on preference or seasonality.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop or in the oven.
