  • 1 pound ground pork sausage

  • ¼ teaspoon black pepper
  • 12 slices white bread, toasted
  • 1 large avocado, pitted, peeled, and sliced
  • ¾ cup cowboy butter, softened, divided

Instructions

  1. Cook Bacon: Preheat the oven to 425°F and line a baking sheet with aluminum foil. Arrange the bacon slices in a single layer on the sheet and bake for 25-30 minutes until crispy. Transfer cooked bacon onto a plate lined with paper towels to drain excess grease.
  2. Prepare Sausage Patties: Divide the ground pork sausage into four equal portions and shape each into a patty slightly larger than your slices of bread.
  3. Cook Sausage Patties: Heat a medium skillet over medium heat. Cook each patty for 3-4 minutes on one side until browned, then flip and cook for another 3-4 minutes until fully cooked through (internal temperature of 160°F). Add a slice of cheddar cheese to each patty while the last side cooks to allow it to melt. Remove patties and drain on paper towels.
  4. Make Scrambled Eggs: Wipe out the skillet with paper towels and melt the butter over medium heat. Add the beaten eggs, salt, and pepper, stirring gently to combine. As eggs start to set, gently pull them across the pan with a spatula to form large soft curds. Continue cooking until thickened and no liquid egg remains, then remove from heat.
  5. Assemble Sandwich: Spread 1 tablespoon of cowboy butter onto one side of each toasted bread slice. Place one sausage patty on a buttered side of a slice of toast, top with another buttered toast slice, then layer two pieces of cooked bacon, avocado slices, and about ½ cup of scrambled eggs. Finish with a final buttered slice of toast on top.
  6. Serve: Cut each sandwich into four triangular pieces and secure each with a toothpick. Repeat assembly and serving steps for remaining sandwiches. Serve immediately while warm.
