Cake
- 15.25 oz box white cake mix
- Ingredients as per cake mix box (usually eggs, oil, and water)
Frosting
- 1/2 cup frosting (homemade or store bought, canned white frosting recommended)
Coating and Decoration
- 12 oz candy melts (any color)
- Lollipop sticks
- Sprinkles (optional)
- Preheat and Prepare Pan: Preheat your oven to 350ºF (175ºC). Spray a 9×13 inch baking pan with nonstick spray and set it aside.
- Mix Cake Batter: In a large bowl, whisk together the cake mix, water, oil, and eggs according to the cake mix box instructions until well combined. Pour the batter evenly into the prepared pan.
- Bake Cake: Bake the cake for the amount of time specified on the box or until a toothpick inserted in the center comes out clean. Remove from oven once done.
- Form Cake Dough: Immediately transfer the warm cake to a large mixing bowl. Add ½ cup frosting and beat with an electric mixer on low speed until the cake and frosting create a dough-like consistency.
- Shape Cake Balls: Use a tablespoon-sized scoop to form the cake dough into balls. Rolling doesn’t have to be perfect at this point. Place the cake balls on a lined baking sheet and refrigerate for 2 hours to firm up.
- Re-roll and Melt Candy Coating: After chilling, gently re-roll the balls for smoother texture if needed and keep chilled. Melt candy melts in a 2-cup liquid measuring cup in 20-second intervals in the microwave, stirring between intervals until smooth and fully melted.
- Insert Sticks and Dip: Dip the tip (about ½ inch) of each lollipop stick into the melted candy, then insert it halfway into each cake ball. Dip each cake ball fully into the melted candy coating, ensuring full coverage and the coating overlaps the base where the stick meets the cake ball.
- Set and Decorate: Gently tap off excess coating, add sprinkles if desired, and place cake pops upright in styrofoam or a box to set. Work in small batches to keep cake balls cold and ensure smooth dipping.
Notes
- Keep cake balls refrigerated before and during dipping to ensure coating adheres well and does not crack.
- Do not freeze cake balls as rapid temperature change can cause the coating to crack.
- A 2-cup liquid measuring cup is ideal for melting candy melts and easy dunking.
- You can customize with different colored candy melts and sprinkles to match any occasion.
- Store cake pops in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
