Instructions

  1. Make the crust: Start by making the pie crust using a food processor in two batches for ease. Add 1.5 cups flour and 1/2 tsp salt to the bowl. With the motor running, gradually add 1/2 cup cold vegan butter, followed by 2 tbsp maple syrup, 2 tbsp almond milk, and 4 tbsp ice water. Process until a dough ball forms.
  2. Repeat for second batch: Remove the dough ball, set aside, and repeat the crust-making process with the remaining ingredients until both dough balls are ready.
  3. Refrigerate the dough: Divide the dough into two balls, the larger portion for the bottom crust, the smaller for the top. Wrap both in plastic wrap and refrigerate for 30 minutes to firm up.
  4. Preheat oven: After chilling, preheat your oven to 400°F (204°C).
  5. Prepare the filling: Heat coconut oil in a large skillet over medium heat. Add the chopped pears, then sprinkle with cane sugar and the chai spice blend (cinnamon, ground ginger, allspice, nutmeg, cloves, cardamom). Cook gently for 5-8 minutes, stirring occasionally, until pears are softened but still hold their shape. Remove from heat.
