A rich and comforting dinner combining tender cheese tortellini with flavorful ground beef, enchilada sauce, and melty cheeses for a cheesy beef enchilada tortellini skillet that’s quick and easy to make.

Ingredients

Scale

Meat and Dairy

  • 1 lb ground beef
  • ½ cup cream cheese
  • 1 cup shredded mozzarella cheese

Pasta

  • 1 (9 oz) package refrigerated cheese tortellini

Sauce and Seasonings

  • 1 (10 oz) can red enchilada sauce
  • ½ medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • Salt and pepper to taste

Garnish

  • Fresh cilantro (optional, for garnish)

Instructions

  1. Sauté Onion and Garlic: In a large skillet over medium heat, sauté the diced onion until translucent, about 3–4 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  2. Cook Ground Beef: Add the ground beef to the skillet. Season with salt, pepper, chili powder, and ground cumin. Cook until the beef is browned thoroughly, then drain any excess fat from the skillet.
  3. Add Enchilada Sauce: Pour the can of red enchilada sauce into the skillet with the beef mixture and bring it to a simmer, allowing the flavors to meld.
  4. Incorporate Cream Cheese: Add the cream cheese in chunks to the skillet. Stir continuously until the cream cheese fully melts and combines smoothly into the sauce.
  5. Mix in Tortellini: Fold in the refrigerated cheese tortellini. Cook on medium-low heat for 5–7 minutes, stirring occasionally, until the tortellini are tender and heated through.
  6. Top with Mozzarella and Broil: Sprinkle shredded mozzarella cheese evenly on top of the skillet. Cover and cook for 2–3 minutes on low heat or place under the broiler carefully until the cheese is bubbly and slightly golden.
  7. Garnish and Serve: Remove from heat and garnish with fresh cilantro if desired. Serve the cheesy beef enchilada tortellini hot for the best flavor experience.

Notes

  • You can substitute ground turkey or chicken for a leaner protein option.
  • If you prefer, use homemade enchilada sauce instead of canned for a fresher flavor.
  • Adding a pinch of smoked paprika can enhance the smoky profile.
  • Be careful when broiling to avoid burning the cheese; watch closely.
  • Leftovers can be stored covered in the refrigerator for up to 3 days.
