  • 1 tomato, sliced

Bread and Condiments

  • 4 slices bread (sourdough, ciabatta, or choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard

Instructions

  1. Prepare the Chicken: Season the chicken breasts evenly with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side or until fully cooked and no longer pink inside. Remove from skillet and let rest for a few minutes before slicing thinly.
  2. Prepare the Avocado and Cheese: Slice the avocado and set aside. Prepare the cheese slices ready for assembling.
  3. Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread to add moisture and flavor.
  4. Assemble the Sandwiches: On two slices of bread, layer the sliced chicken, avocado, and cheese. Add thin slices of red onion and tomato on top. Cover with the remaining bread slices, mayo side down.
