Instructions

  1. Preheat Oven: Heat your oven to 400°F (200°C) to prepare for baking the pizza.
  2. Cook Chicken: Lightly season both sides of the chicken thighs with salt and pepper. Heat the olive oil in a sauté pan over medium heat, then add the chicken. Cover with a lid and cook for about 5 minutes per side, allowing the chicken to steam and become tender while locking in flavor.
  3. Shred Chicken: Remove the cooked chicken from the pan and place it in a bowl. Use two forks to shred the chicken into bite-sized pieces, then toss with 2 tablespoons of BBQ sauce to coat evenly.

  5. Prepare Pizza Dough: Line a baking sheet or pizza pan with parchment paper. Roll out the pizza dough into a 12-inch circle or two smaller 6-inch pies as desired.
  6. Assemble Pizza: Spread the remaining BBQ sauce evenly over the dough. Sprinkle shredded mozzarella cheese on top. Distribute the shredded BBQ chicken and caramelized onions evenly over the cheese. Optionally, sprinkle with fresh cilantro for added flavor and freshness.
