Dressing

  • ⅔ cup plain yogurt
  • ¼ cup soy sauce
  • ¼ cup mayonnaise
  • ½ teaspoon black pepper
  • ¼ teaspoon ground ginger
  • Honey, to taste
  • Salt, to taste

Instructions

  1. Toast sesame seeds: Preheat the oven to 375°F (190°C). Spread the sesame seeds evenly on a baking sheet and toast in the oven for about 5 minutes. Keep a close watch to prevent burning. Once toasted, remove from oven and set aside to cool.
  2. Combine salad ingredients: In a large bowl, mix together the shredded chicken, cooked rotini pasta, fresh snow peas, diced red bell pepper, shredded carrot, chopped napa cabbage, sliced green onions, sliced water chestnuts, and chow mein noodles. Toss gently to combine all the ingredients evenly.
  3. Prepare the dressing: In a separate bowl, whisk together the plain yogurt, soy sauce, mayonnaise, black pepper, and ground ginger. Taste the dressing and add honey gradually to reach your desired level of sweetness. Adjust salt if needed.
