4.7 from 9 reviews

This Cinnamon Swirl Protein Cake is a healthy, high-protein dessert that’s perfect for a post-workout snack or a guilt-free treat. Combining oats, vanilla protein powder, and a touch of cinnamon, this moist and flavorful cake is easy to make and gluten-free. The cinnamon swirl adds a warm, comforting spice that perfectly complements the subtle sweetness enhanced by Stevia.

Ingredients

Scale

Dry Ingredients

  • ½ cup oats
  • 2 scoops vanilla protein powder (about 2 ounces)
  • 1 teaspoon Stevia
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon

Wet Ingredients

  • 2 egg whites (approximately 2 ounces or 6 tablespoons)
  • ⅔ cup water

Instructions

  1. Preheat Oven: Preheat your oven to 390°F (200°C) to ensure it’s at the perfect temperature for baking the cake evenly.
  2. Blend Ingredients: Add oats, egg whites, water, vanilla protein powder, Stevia, and baking powder to a blender. Blend until the mixture is smooth and has the consistency of thick pancake batter.
  3. Pour Batter and Add Cinnamon: Pour half of the batter into a small (about 4.5 inches across) nonstick pan. Evenly sprinkle the tablespoon of cinnamon over this layer.
  4. Add Remaining Batter: Pour the remaining batter on top of the cinnamon layer to cover it completely.
  5. Create Cinnamon Swirl: Use a knife to gently swirl through the batter a few times to create a marbled cinnamon effect without fully mixing it in.
  6. Bake: Bake in the preheated oven for 12 minutes. Once done, let the cake rest for a few minutes before slicing and serving.

Notes

  • For a richer flavor, you can substitute water with unsweetened almond milk or another plant-based milk.
  • Make sure not to over-swirl the cinnamon to keep distinct layers and visual appeal.
  • If you prefer a sweeter cake, you may add a bit more Stevia or serve with a drizzle of honey or maple syrup.
  • Check doneness by inserting a toothpick into the center; it should come out clean.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
