Instructions

  1. Prepare Ingredients: Bring the cream cheese (or coconut butter) and butter (or additional coconut butter) to room temperature so they soften and are easier to mix.
  2. Mix Until Smooth: Combine all the main ingredients including powdered sugar and instant coffee until the mixture is smooth. Using a hand mixer is recommended for the creamiest texture, but a fork can also be used effectively.
  3. Shape the Truffles: Spread the mixture into a container if you want bars or squares, or freeze it for a few minutes until firm enough to scoop. Use a mini cookie scoop to form balls and place them on a parchment-lined plate.
  4. Freeze to Firm Up: Freeze the scooped truffle balls until they are solid.
