These Cottage Cheese Egg Bites are a protein-packed, savory breakfast or snack option that combine creamy cottage cheese with eggs, shredded cheese, and flavorful seasonings. Packed with veggies and optional lean meats, they are baked to fluffy, golden perfection and perfect for meal prep or on-the-go breakfasts.

Ingredients

Scale

Egg Mixture

  • 6 large eggs
  • 1 cup cottage cheese
  • ½ cup shredded cheese (cheddar, mozzarella, or Swiss)
  • ¼ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Add-ins

  • ½ cup finely chopped vegetables (bell peppers, spinach, mushrooms)
  • ½ cup cooked turkey bacon or chicken sausage (optional)

Instructions

  1. Preheat Oven: Set your oven to 325°F (163°C) to ensure it reaches the ideal baking temperature for the egg bites.
  2. Prepare Muffin Tin: Grease a muffin tin lightly or use a silicone muffin tray for easy removal.
  3. Blend Ingredients: In a blender, combine eggs, cottage cheese, shredded cheese, milk, salt, black pepper, garlic powder, and onion powder. Blend until the mixture is smooth and creamy, ensuring a perfect texture.
  4. Mix in Veggies and Meat: Pour the blended egg mixture into a bowl, then fold in the finely chopped vegetables and optionally the cooked turkey bacon or chicken sausage to distribute evenly.
  5. Fill Muffin Cups: Spoon the mixture evenly into 12 muffin cups, filling each about three-quarters full to allow room for rising.
  6. Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, until the egg bites are set and slightly golden on top.
  7. Cool and Serve: Remove from the oven and let the egg bites rest for 5 minutes. This helps them firm up and eases removal from the tin.

Notes

  • Feel free to customize the shredded cheese type according to your preference (cheddar, mozzarella, Swiss all work well).
  • For a vegetarian option, omit the turkey bacon or chicken sausage.
  • Silicone muffin trays make removing the egg bites easier and reduce the need for excessive greasing.
  • These egg bites can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
  • Reheat gently in a microwave or oven before serving for best texture and flavor.
