Instructions

  1. Cook the Pasta: Cook the pasta according to the package instructions until al dente. Drain well and set aside.
  2. Prepare the Cheese Sauce Base: Combine the cottage cheese, skim milk, and grated Parmesan cheese in a high-speed blender or food processor.
  3. Blend Until Smooth: Blend on high speed until the mixture is creamy, thick, and completely smooth. Set this blended mixture aside.
  4. Sauté Garlic: Heat olive oil in a medium saucepan over medium heat. Add the garlic cloves and sauté until fragrant, about 30 seconds to 1 minute, taking care not to burn the garlic.
  5. Add Cheese Mixture to Pan: Pour the blended cottage cheese mixture into the saucepan and bring it to a gentle simmer. The sauce will initially appear thin and watery, which is normal. Reduce the heat to low.
  6. Thicken the Sauce: In a small bowl, whisk the cornstarch together with cold water to make a slurry. Gradually whisk this into the warm sauce and cook, stirring frequently, until the sauce thickens to your desired consistency.
  7. Combine Pasta and Sauce: Stir in the cooked pasta and cook for a few more minutes until the pasta is heated through and well-coated with the sauce.
  8. Serve: Serve immediately topped with freshly chopped parsley for a bright, fresh finish.
  9. Storage: Store any leftover sauce in an airtight container in the refrigerator for up to 3 days. The sauce will thicken when chilled; rewarm gently with a splash of water to loosen before serving. The sauce can also be frozen for up to one month; thaw in the refrigerator overnight before use.
