Ingredients

Scale

Chicken and Spinach

  • 23 cups cooked and shredded chicken (breasts or thighs)
  • 4 cups fresh spinach or 1 package frozen spinach, thawed and drained

Creamy Sauce

  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 2 cloves garlic, freshly minced
  • 1 small onion, finely chopped
  • Salt, to taste
  • Black pepper, to taste
  • Pinch of nutmeg

Cheese Topping

  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Optional Additions

  • Sliced mushrooms (1/2 cup)
  • Artichoke hearts (1/2 cup, chopped)
  • Cooked pasta (1 cup)

Instructions

  1. Prepare the Ingredients: Cook and shred your chicken if it’s not already cooked. If using fresh spinach, sauté it lightly in a pan until just wilted. For frozen spinach, make sure to thaw completely and drain any excess water thoroughly to prevent the casserole from becoming soggy.
  2. Make the Sauce: In a mixing bowl, combine the softened cream cheese, sour cream, minced garlic, finely chopped onion, salt, pepper, and a pinch of nutmeg. Stir the mixture until it becomes smooth and well-blended, forming a creamy base for the casserole.
  3. Assemble the Casserole: Preheat your oven to 375°F (190°C). Grease a medium-sized casserole dish. Layer the shredded chicken and sautéed or thawed spinach in the dish. Pour the creamy sauce over the top and gently mix with the chicken and spinach to ensure even distribution.
  4. Add Cheese and Bake: Sprinkle shredded mozzarella and grated Parmesan cheese evenly over the top of the assembled casserole. Place the dish in the preheated oven and bake uncovered for 25 to 30 minutes, or until the cheese is melted, bubbly, and golden brown on top.
  5. Serve and Enjoy: After baking, allow the casserole to cool slightly for about 5 minutes before serving. This dish pairs wonderfully with a fresh salad, crusty bread, or a side of rice to make a complete and satisfying meal.

Notes

  • Use cooked chicken leftovers to save cooking time.
  • Be sure to drain spinach thoroughly to avoid watery casserole.
  • Feel free to add mushrooms or artichoke hearts for extra flavor and texture.
  • For a low-carb meal, skip adding pasta.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • You can substitute mozzarella with cheddar or your favorite melting cheese.
