Ingredients

Scale

Chicken

  • 2 Boneless Skinless Chicken Breasts, cooked & diced
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • Salt, to taste
  • Black Pepper, to taste

Pasta & Vegetables

  • 8 ounces Orzo Pasta
  • 2 Celery Stalks, finely diced
  • 2 Carrots, finely diced
  • ½ Yellow Onion, finely diced

Sauce & Cooking Fat

  • 5 tablespoons Butter
  • 2 tablespoons Olive Oil
  • 2 cups Chicken Broth
  • ½ cup Heavy Whipping Cream
  • 1 teaspoon Chicken Bouillon Powder
  • ⅓ cup All Purpose Flour

Instructions

  1. Cook the Orzo: Prepare the orzo pasta according to package instructions. Drain and set aside while you prepare the rest of the dish.
  2. Season and Cook Chicken: Season the chicken breasts evenly with onion powder, garlic powder, paprika, salt, and black pepper. Heat a splash of olive oil in a skillet over medium-high heat. Cook the chicken until it reaches an internal temperature of 165°F (74°C). Remove from heat and dice into bite-sized pieces.
  3. Sauté Vegetables: In a large skillet over medium-high heat, melt the butter and add olive oil. Once the butter has melted, add the diced onion, carrots, and celery. Sauté the vegetables for 4-5 minutes until they start to soften.
  4. Make the Roux: Reduce the heat to low. Sprinkle the all-purpose flour over the sautéed vegetables and whisk constantly to form a smooth paste or roux. Keep stirring and cooking for 2-3 minutes to remove the raw flour taste.
  5. Add Liquids: Gradually pour in the chicken broth and heavy whipping cream while whisking to prevent lumps. Add the chicken bouillon powder. Continue whisking until the mixture thickens and becomes creamy.
  6. Combine Chicken and Orzo: Add the diced chicken into the sauce mixture. Let everything simmer gently until the sauce reaches your desired thickness. Finally, stir in the cooked and drained orzo until well combined.
  7. Serve and Enjoy: Remove from heat and serve the creamy chicken pot pie orzo warm. Enjoy this comforting and flavorful dish!

Notes

  • For extra flavor, consider adding fresh thyme or rosemary while sautéing vegetables.
  • Use low-sodium chicken broth to control the salt level.
  • Substitute heavy cream with half-and-half for a lighter option, though the sauce will be less rich.
  • Make sure to cook chicken thoroughly to an internal temperature of 165°F for safety.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stove or in the microwave.
