  • 15 oz pumpkin puree
  • 14.5 oz diced tomatoes
  • 2 cups chicken broth
  • 15 oz navy beans (drained and rinsed)
  • 15 oz cannellini beans (drained and rinsed)

Spices and Seasonings

  • 1 tbsp fresh thyme (or 1 tsp dried thyme)
  • 2 tbsp chili powder
  • 2 tbsp sugar or honey
  • Salt and pepper (to taste)

Instructions

  1. Sauté aromatics: Melt butter in a Dutch oven over medium-high heat. Add chopped carrots and cook for 3 minutes, stirring frequently. Then add chopped celery and cook while stirring for another 3 minutes. Finally, add diced onions and continue cooking until onions are translucent, about 3 minutes.
  2. Cook turkey: Add the ground turkey to the Dutch oven and stir continuously with the vegetables, cooking until the turkey is fully cooked through, about 8-10 minutes. If using leftover cooked turkey, cook the vegetables an additional 5 minutes before adding the turkey and other ingredients in the next step.
  3. Create broth: Stir in pumpkin puree, diced tomatoes, navy beans, cannellini beans, chicken broth, chopped spinach, fresh thyme, chili powder, and sugar or honey. Bring the mixture to a boil, then reduce heat to simmer.
  4. Add creaminess and season: Stir in the sour cream until fully incorporated and remove the chili from heat. Season to taste with salt and pepper.
  5. Serve: Ladle the chili into bowls and enjoy warm as a delicious, comforting meal.
