  • 1 tablespoon minced garlic
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine (or rice vinegar)
  • 1 tablespoon sesame oil

Instructions

  1. Soften Rice Paper: Soak one rice paper sheet in warm water for 10–15 seconds until it becomes soft and pliable.
  2. Prepare Working Surface: Transfer the softened rice paper to a damp surface such as a wooden board or a clean damp towel to prevent sticking.
  3. Add Filling: Place a small layer of cooked vermicelli noodles, shredded carrots, chopped cabbage, and your choice of tofu or cooked shrimp in the center of the rice paper sheet.
  4. Roll the Sheets: Fold in the sides of the rice paper sheet, then roll it tightly from the bottom upwards, similar to a burrito. Repeat this process with the remaining rice paper sheets and filling.
  5. Prepare for Air Frying: Lightly brush or spray each roll with sesame oil or a neutral oil to ensure crispiness during air frying.
  6. Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for 2 to 3 minutes.
  7. Arrange Rolls: Place the rolls seam-side down in a single layer within the air fryer basket, making sure not to overcrowd for even cooking.
  8. Air Fry: Air fry the rolls for 8 to 10 minutes, flipping them halfway through the cooking time until they turn golden brown and crispy on all sides.
  9. Serve: Serve the crispy noodle rolls hot accompanied by your favorite dipping sauces such as sweet chili, peanut, or soy-ginger.
