Ingredients

Scale

For the Salmon Bites

  • 1 lb fresh, skinless salmon fillets, cut into 1-inch cubes
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil (for frying)

For the Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha (adjust to taste)
  • 1 tbsp honey
  • 1 tbsp lime juice

Instructions

  1. Prepare the salmon: Cut the salmon into 1-inch cubes and pat them dry thoroughly with paper towels to remove excess moisture, ensuring a crisp coating later.
  2. Set up the breading station: Arrange three separate bowls—one with all-purpose flour, another with beaten eggs, and a third with panko breadcrumbs mixed evenly with garlic powder, onion powder, paprika, salt, and black pepper.
  3. Bread the salmon bites: Coat each salmon cube first in the flour, shaking off excess, then dip into the beaten eggs, and finally roll thoroughly in the seasoned panko mixture to ensure an even crust.
  4. Heat the oil: Pour about 1 inch of vegetable oil into a skillet and heat over medium flame until it reaches approximately 350°F (175°C) or is hot enough to sizzle a breadcrumb on contact.
  5. Fry the salmon: Carefully fry the breaded salmon bites in batches to avoid overcrowding. Cook for 2-3 minutes per side until they turn golden brown and crispy.
  6. Make the Bang Bang sauce: In a small mixing bowl, combine mayonnaise, sweet chili sauce, sriracha, honey, and lime juice. Whisk until smooth and well blended.
  7. Serve: Place the crispy salmon bites on paper towels to drain excess oil. Drizzle generously with the Bang Bang sauce and serve immediately while hot and crispy.

Notes

  • Ensure the salmon is dry before breading to achieve maximum crispiness.
  • Adjust the sriracha quantity in the sauce to suit your desired spice level.
  • Use fresh salmon for best flavor and texture; avoid frozen or previously cooked salmon.
  • Cook in batches to keep the oil temperature consistent and prevent soggy bites.
  • For a healthier option, bake the salmon bites at 425°F for 12-15 minutes instead of frying.
