Truffle Base

Instructions

  1. Make orange purée: Zest one orange and set the zest aside for later use. Peel the orange completely and blend it until smooth to create the purée.
  2. Melt base mixture: In a saucepan over low heat, combine 1 cup of dark chocolate chips, the orange purée, reserved orange zest, coconut milk, vanilla extract, and salt. Stir continuously until the mixture is completely melted and smooth.
  3. Mix and chill: Pour the melted mixture into a bowl and stir in the coconut flour until fully incorporated. Cover the bowl and refrigerate for 1 hour to help the mixture firm up.
  4. Form truffles: Remove the chilled mixture from the fridge. Using a scoop or spoon, form the mixture into approximately 14 even-sized balls. Place them on a tray and chill again to set.
  5. Prepare chocolate coating: Melt ½ cup dark chocolate chips and 1 tbsp coconut oil together in the microwave in short bursts, stirring often until smooth.
  6. Coat truffles: Dip each chilled truffle ball into the melted chocolate coating, letting the excess drip off. Place the coated truffles on a parchment-lined tray.
