Truffle Base
- 1 cup dark chocolate chips
- ½ cup orange purée (from 1 medium orange, blended)
- ¼ cup coconut milk
- 3 tbsp coconut flour
- Zest from one orange
- 1 tsp vanilla extract
- ¼ tsp salt
Chocolate Coating
- ½ cup dark chocolate chips
- 1 tbsp coconut oil
Garnish
- Orange zest or sea salt, for sprinkling
- Make orange purée: Zest one orange and set the zest aside for later use. Peel the orange completely and blend it until smooth to create the purée.
- Melt base mixture: In a saucepan over low heat, combine 1 cup of dark chocolate chips, the orange purée, reserved orange zest, coconut milk, vanilla extract, and salt. Stir continuously until the mixture is completely melted and smooth.
- Mix and chill: Pour the melted mixture into a bowl and stir in the coconut flour until fully incorporated. Cover the bowl and refrigerate for 1 hour to help the mixture firm up.
- Form truffles: Remove the chilled mixture from the fridge. Using a scoop or spoon, form the mixture into approximately 14 even-sized balls. Place them on a tray and chill again to set.
- Prepare chocolate coating: Melt ½ cup dark chocolate chips and 1 tbsp coconut oil together in the microwave in short bursts, stirring often until smooth.
- Coat truffles: Dip each chilled truffle ball into the melted chocolate coating, letting the excess drip off. Place the coated truffles on a parchment-lined tray.
- Finish: Sprinkle the coated truffles with the reserved orange zest or a pinch of sea salt as desired. Refrigerate the truffles for 15–20 minutes until the coating is set before serving.
Notes
- For a more intense orange flavor, consider adding a few drops of orange extract in addition to the fresh purée.
- Use a high-quality dark chocolate with at least 70% cocoa for the best taste.
- Store truffles in an airtight container in the refrigerator for up to one week.
- Coconut flour helps absorb moisture and gives the truffles a firmer texture; do not substitute with other flours.
- Ensure the chocolate coating is smooth and warm to avoid clumpy dipping.
