Ingredients

Scale

Chicken and Marinade

  • 8 boneless skinless chicken thighs
  • 2 tbsp minced green onions (about 2 green stalks, white part separated)
  • 2 tbsp white miso paste
  • 2 tbsp rice vinegar
  • 2 tbsp mirin
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp minced garlic

Garnish

  • Chopped green onions
  • Fresh cilantro leaves

Instructions

  1. Prepare the Marinade: In a medium-sized bowl, combine the mirin, white miso paste, honey, soy sauce, rice vinegar, minced garlic, and the white part of the green onions. Whisk the ingredients together until smooth and well blended.
  2. Marinate the Chicken: Add the boneless skinless chicken thighs to the bowl with the marinade. Massage the marinade thoroughly into the chicken pieces to ensure each piece is well coated. Allow the chicken to sit for at least 15 minutes to absorb the flavors, or refrigerate for up to 2 hours for more intense flavor.
  3. Prepare Air Fryer: Line the air fryer tray or basket with parchment paper or aluminum foil to prevent sticking and to catch excess marinade during cooking.
  4. Arrange Chicken: Place the marinated chicken thighs in a single layer on the prepared air fryer tray. Pour any remaining miso glaze over and around the chicken to enhance juiciness during cooking.
  5. Air Fry the Chicken: Cook the chicken at 375°F (190°C) for 20 minutes, flipping halfway through the cooking time to ensure even browning and cooking.
  6. Broil for Crispiness: After air frying, broil the chicken for 2 minutes to develop a nice crust and caramelization on the surface.
  7. Check Doneness and Serve: Confirm that the internal temperature of the chicken reaches 165°F (74°C) for safe consumption. Garnish with chopped green onions and fresh cilantro before serving for added freshness and color.

Notes

  • For best flavor, marinate the chicken for at least 30 minutes, or up to 2 hours if time permits.
  • If you don’t have an air fryer, you can bake the chicken in a preheated oven at 400°F (200°C) for 25-30 minutes, flipping halfway.
  • Adjust the amount of honey based on your preferred level of sweetness.
  • Rice vinegar can be substituted with apple cider vinegar if needed.
  • Ensure the chicken is cooked through by checking the internal temperature with a meat thermometer.
  • Leftover chicken stays good in the refrigerator for up to 3 days and can be reheated.
