Instructions

  1. Crush Cookies: Use a food processor or place gingersnap or gingerbread cookies in a sealed plastic bag and crush them finely using a rolling pin until they turn into fine crumbs.
  2. Mix Ingredients: In a bowl, combine the cookie crumbs with softened cream cheese, powdered sugar if using, ground ginger, cinnamon, and cloves. Stir well until a smooth, sticky dough forms.
  3. Shape Truffles: Scoop or roll the mixture into approximately 1-inch balls. Place them on a baking sheet lined with parchment paper and chill in the refrigerator for at least 30 minutes.
