Golden Grahams S’Mores Bars are a delicious, easy-to-make treat combining the classic flavors of s’mores in a convenient bar form. Made with gooey marshmallows, melted milk chocolate chips, buttery corn syrup, and crunchy Golden Grahams cereal, these bars are perfect for snacking, dessert, or sharing at gatherings.

  • 1 1/2 cups milk chocolate chips
  • 1 cup mini marshmallows (additional)

  • 7 cups Golden Grahams cereal

Instructions

  1. Prepare the Pan: Butter or grease a 9×13 inch baking pan to prevent sticking and make it easier to remove the bars once set.
  2. Melt Ingredients: In a large saucepan, combine 5 cups mini marshmallows, 1 1/2 cups milk chocolate chips, 5 tablespoons butter, and 1/4 cup corn syrup. Melt them together over low heat while stirring gently with a rubber spatula until smooth and fully combined.
  3. Remove from Heat: Once the mixture is melted and smooth, take the pan off the heat and place it on a heat-proof surface to prevent further cooking.
  4. Add Cereal and Extra Marshmallows: Immediately stir in 7 cups Golden Grahams cereal and the remaining 1 cup mini marshmallows into the melted mixture. The mixture will become very sticky as it’s combined.
  5. Press into Pan: Spoon the sticky batter into the prepared baking pan and flatten it evenly using the back of a spatula. Lightly greasing the spatula can help prevent sticking during this step.
  6. Set and Cut: Allow the bars to harden at room temperature for about 60 minutes. Once firm, cut into squares and serve.

Notes

  • Using light corn syrup maintains the classic sweet texture and chewiness; however, you can substitute with golden syrup or honey if needed, although texture may vary slightly.
  • Greasing your spatula or hands lightly when pressing the mixture helps manage stickiness and produces smoother bars.
  • Store the bars in an airtight container at room temperature for up to 3 days to keep them fresh.
  • For extra indulgence, sprinkle a little sea salt on top before setting to enhance the chocolate flavor.
  • These bars are not gluten-free as Golden Grahams contain wheat; however, you can try using gluten-free cereal alternatives.
