Ingredients

Scale

For the Burgers

  • 1 pound ground chicken
  • ¼ cup diced red onion
  • 3 garlic cloves, minced
  • ¼ cup sun-dried tomatoes, finely chopped
  • 1 cup (loosely packed) baby spinach, roughly chopped
  • 1 tablespoon chopped fresh dill
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons extra virgin olive oil

Optional Items for Serving

  • Butter lettuce
  • Tzatziki sauce
  • Crumbled feta cheese
  • Sliced onion
  • Sliced tomato
  • Sliced avocado

Instructions

  1. Make the burger patties: In a medium bowl, combine the ground chicken, diced red onion, minced garlic, finely chopped sun-dried tomatoes, roughly chopped baby spinach, chopped fresh dill, dried oregano, kosher salt, and ground black pepper. Use your hands to mix everything together thoroughly until all ingredients are evenly distributed. Divide the mixture into 4 equal portions and shape each into a large patty.
  2. Cook the patties: Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat. Once hot, place the patties in the skillet and cook for about 5 minutes on each side, or until the outside is golden brown and the internal temperature reaches 165°F (74°C), ensuring they are cooked through. Alternatively, you can cook the patties on a preheated grill over medium heat using the same cooking time and temperature guidelines.
  3. Assemble the chicken burgers: Serve the chicken patties plain or assemble them into burgers by placing them on butter lettuce leaves or buns, then topping with your choice of optional ingredients such as tzatziki sauce, crumbled feta cheese, sliced onion, sliced tomato, and sliced avocado for added flavor and texture.

Notes

  • Make sure to cook the chicken patties thoroughly to an internal temperature of 165°F (74°C) for food safety.
  • You can substitute ground chicken with ground turkey if preferred.
  • For a low-carb option, serve the patties wrapped in lettuce instead of on a bun.
  • Besides skillet or grill, these patties can also be cooked in an air fryer for about 10-12 minutes at 375°F, flipping halfway.
  • Fresh herbs such as dill and oregano can be adjusted or replaced with other Mediterranean herbs like thyme or parsley as desired.
