Breadcrumbs

  • 1 tablespoon unsalted butter
  • 1 cup panko breadcrumbs
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon Italian seasoning

Chicken Mixture

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 teaspoon salt, divided
  • 4 cloves garlic, roughly chopped
  • 2 pounds ground chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 770 mL marinara sauce (1 jar Rao’s)
  • 1 cup grated parmesan cheese
  • 2 sprigs basil
  • to 2 cups shredded mozzarella cheese

Instructions

  1. Toast the Breadcrumbs: In a large non-stick skillet over medium-low heat, melt the butter. Add the panko breadcrumbs along with salt, garlic powder, onion powder, and Italian seasoning. Spread evenly and leave undisturbed for 30 seconds to 1 minute before stirring. Repeat 2 to 3 times until the breadcrumbs are golden and toasted. Remove from skillet and set aside.
  2. Sauté Onions and Garlic: In the same skillet, heat olive oil over medium heat. Add diced onions and half a teaspoon of salt; sauté for 2 minutes until softened. Add chopped garlic and cook for an additional minute until fragrant.
  3. Brown the Ground Chicken: Push the onion and garlic to the skillet’s sides and add the ground chicken to the center. Sprinkle remaining salt, garlic powder, onion powder, and dried oregano over the chicken. Break up the chicken into small pieces and cook for 4 to 5 minutes until browned throughout.
  4. Add Sauce, Cheese, and Basil: Pour in the marinara sauce, add grated parmesan, and toss in the basil sprigs. Stir to combine and let simmer gently for 10 minutes to blend flavors.
  5. Finish with Mozzarella and Breadcrumbs: Remove and discard the basil sprigs. Sprinkle the shredded mozzarella cheese on top and cook for 2 more minutes until the cheese has melted. Garnish with toasted breadcrumbs on top or serve them separately to add to individual plates. This dish is ideal served over spaghetti or your favorite pasta, optionally topped with extra fresh basil.
