Blue (Orange Mango) Gushers

  • 1 cup Orange Juice, divided
  • 1/4 cup Mango, puréed
  • 1/4 cup Grass-Fed Gelatin
  • 12 Tbsp Honey, optional
  • 1 pinch Spirulina Powder (blue)

Green (Peach Lemonade) Gushers

  • 1 cup Lemonade, no sugar added
  • 1/4 cup Peaches, puréed
  • 1/4 cup Grass-Fed Gelatin
  • 12 Tbsp Honey, optional
  • 1 pinch Matcha Green Tea Powder

Filling

  • 3/4 cup Frozen Strawberries
  • 1/2 Tbsp Arrowroot Flour
  • 1 1/2 Tbsp Water

Instructions

  1. Prepare the Strawberry Filling: Thaw the frozen strawberries to release their juices, then place them in a blender or food processor and puree until smooth. Add a squeeze of fresh lemon juice for brightness.
  2. Cook the Filling: Pour the strawberry puree into a saucepan over low heat. Mix the arrowroot flour with water until dissolved, then stir this mixture into the warming strawberry puree. Cook gently until thickened. Remove from heat and set aside to cool.
  3. Prepare the Blue Gummy Base: Whisk together 1/2 cup of orange juice with 1/4 cup of grass-fed gelatin to create a gelatin bloom. Warm the puréed mango (thaw and blend frozen mango with a splash of juice if needed) together with the remaining 1/2 cup orange juice on the stovetop. Once warm, stir in the gelatin mixture until fully dissolved. Dissolve the spirulina powder in a small amount of water and mix into the fruit juice blend until the desired blue shade is achieved. Add honey if using.
  4. Prepare the Green Gummy Base: Repeat the steps from the blue gummy base using lemonade and puréed peaches with grass-fed gelatin. Dissolve the matcha powder in water and add for a vibrant green color. Sweeten with honey optionally.
  5. Mold the Gummies: Pour or syringe the first half of the gummy mixture (either blue or green) into the bottom half of a silicone mold. Refrigerate for 20 minutes to set.
  6. Add the Filling: Transfer the thickened strawberry filling into a piping bag or syringe. Dollop the filling onto the center of each partially set gummy in the mold.
  7. Top with Remaining Gummy Mixture: Pour or syringe the remaining half of the gummy juice mixture over the filling to cover it fully.
  8. Final Set: Refrigerate the filled molds for an additional 30 minutes until fully set and firm.
  9. Unmold and Store: Carefully remove the gummies from the silicone mold. Store them in an airtight container in the refrigerator for freshness. Enjoy your homemade gushers!
