Dough

  • 1 batch Greek yogurt dough
  • 2 tablespoon sugar

Filling

  • 1/2 cup strawberry jam (can use any jam or jelly of choice)

Topping & Glaze

  • 2 tablespoons milk
  • 1/2 cup powdered sugar
  • 2 tablespoon Greek yogurt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat and prep baking tray: Preheat the oven to 180C/350F. Line a large baking tray with parchment paper, and set aside.
  2. Prepare the dough: In a large mixing bowl, prepare the Greek yogurt dough with sugar and mix well until combined. Using your hands, shape the dough into a thick, smooth ball.
  3. Knead the dough: Flour a kitchen surface and sprinkle a tablespoon of flour on top of the ball of dough. Transfer the ball of dough onto the floured surface and knead several times to develop consistency.
  4. Roll and cut dough: Using a rolling pin, roll out the dough into a rectangular shape about 12 inches by 6 inches. Using a sharp knife or pizza cutter, slice once lengthwise and 7 times crosswise to form 16 uniform rectangles.
  5. Assemble pop tarts: Place 8 of the rectangles on the lined baking tray, evenly spaced apart. Spoon 1 tablespoon of jam onto each rectangle. Place the remaining 8 rectangles on top of each jam-filled rectangle. Press along each side with a fork to seal completely. Brush the tops with milk using a pastry brush.
  6. Bake: Bake the pop tarts for 15-20 minutes or until golden on top. Remove from oven and allow to cool before glazing.
  7. Prepare glaze and finish: While pop tarts are cooling, prepare the glaze by combining powdered sugar with vanilla extract and Greek yogurt. Whisk until thick. Spoon frosting over the tops of each pop tart and spread slightly. Optionally, add sprinkles.
