Chocolate Ganache
- 1/4 Cup heavy cream
- 1 (12 ounce) bag semi-sweet chocolate chips
- 2 generous spoonfuls instant coffee
- 1/2 Cup Kahlua
Coating
- Heat Cream and Add Coffee: In a small saucepan over medium-low heat, warm the heavy cream until steam starts to rise and just before it reaches a boil. Remove from heat and stir in the instant coffee until dissolved.
- Melt Chocolate: Pour the semi-sweet chocolate chips into the hot cream mixture and let sit for about one minute without stirring to allow the chocolate to soften.
- Combine and Add Kahlua: Whisk or stir the chocolate and cream mixture until smooth and fully combined. Then add the Kahlua and mix until the ganache is creamy and glossy.
- Chill Ganache: Pour the chocolate mixture into a 9×9-inch baking dish. Cover with plastic wrap and refrigerate for several hours to overnight until firm enough to handle.
- Form Truffles: Once the ganache is set, remove from the fridge and scoop spoonfuls of the chocolate. Roll each scoop quickly into 1-inch balls by hand.
- Coat with Cocoa Powder: Roll each chocolate ball in a bowl of cocoa powder until evenly coated. Place the finished truffles into a container and refrigerate until ready to serve.
- Serve: Arrange truffles on a platter or individual paper candy liners for an elegant presentation.
Notes
- Be sure not to let the cream boil to prevent burning the coffee flavor.
- Use good quality chocolate chips for a smoother ganache.
- Roll truffles quickly as the warmth of your hands can melt the chocolate.
- Store truffles covered in the refrigerator for up to one week.
- For a stronger coffee flavor, increase the amount of instant coffee slightly.
