  • 3 scoops (90g) PlantFusion vanilla bean protein powder
  • ½ cup (50g) old-fashioned rolled oats (gluten-free, if necessary)
  • 1 tbsp (9g) poppy seeds
  • ½ tbsp (7g) Truvia (natural sweetener)
  • 1 tsp freshly grated lemon zest (about one medium lemon)

Wet Ingredients

  • 6 tbsp (90mL) freshly squeezed lemon juice (about two medium lemons)
  • 6 tbsp (90mL) water

Instructions

  1. Combine Dry Ingredients: In a large bowl, mix together the PlantFusion vanilla bean protein powder, rolled oats, poppy seeds, Truvia, and freshly grated lemon zest until evenly combined.
  2. Add Wet Ingredients: Pour in the freshly squeezed lemon juice and water to the bowl. Stir thoroughly until all the ingredients are fully incorporated and the mixture begins to stick together.
  3. Form Energy Bites: Using your hands or a small scoop, shape the mixture into 28 small spheres, about 1 inch in diameter.
  4. Store and Chill: Place the formed bites into a Tupperware container or airtight storage container. Seal and refrigerate them until firm and ready to eat, which also helps the flavors meld.

Notes

  • If you do not have PlantFusion protein powder, you can substitute with another vanilla plant-based protein powder.
