- ½ cup (50g) old-fashioned rolled oats (gluten-free, if necessary)
- 1 tbsp (9g) poppy seeds
- ½ tbsp (7g) Truvia (natural sweetener)
- 1 tsp freshly grated lemon zest (about one medium lemon)
Wet Ingredients
- 6 tbsp (90mL) freshly squeezed lemon juice (about two medium lemons)
- 6 tbsp (90mL) water
- Combine Dry Ingredients: In a large bowl, mix together the PlantFusion vanilla bean protein powder, rolled oats, poppy seeds, Truvia, and freshly grated lemon zest until evenly combined.
- Add Wet Ingredients: Pour in the freshly squeezed lemon juice and water to the bowl. Stir thoroughly until all the ingredients are fully incorporated and the mixture begins to stick together.
- Form Energy Bites: Using your hands or a small scoop, shape the mixture into 28 small spheres, about 1 inch in diameter.
- Store and Chill: Place the formed bites into a Tupperware container or airtight storage container. Seal and refrigerate them until firm and ready to eat, which also helps the flavors meld.
