Overnight Oats Base
- 1 1/2 Cups Coconut Milk
- 1 Cup Quick Rolled Oats
- 1/4 Cup Unsweetened Greek Yogurt
- 2 Tablespoons Chia Seeds
- 2 Tablespoons Unsweetened Shredded Coconut
- 2 Tablespoons Pure Honey
- 1/2 teaspoon Vanilla Extract
- Pinch of Salt (about 1/8 teaspoon)
Fruit Layer
- 2 Cups Fresh Mango, cubed
- Mix the base ingredients: In a medium-sized bowl, combine the coconut milk, quick rolled oats, unsweetened Greek yogurt, chia seeds, shredded coconut, pure honey, vanilla extract, and a pinch of salt. Stir well to ensure all ingredients are thoroughly mixed.
- Prepare the jars: Using two pint-sized mason jars or similar containers, place about 1/3 cup of the fresh cubed mango at the bottom of each jar to create a fruity base layer.
- Add the oatmeal mixture: Spoon approximately 1/2 cup of the prepared oatmeal mixture on top of the mango layer in each jar, spreading it evenly.
- Create the layered effect: Add another layer of cubed mango over the oatmeal mixture, followed by the remaining oatmeal mixture, dividing it evenly between the two jars.
- Top with mango: Finish by topping each jar with the remaining fresh mango cubes to add a fresh and colorful finish.
- Refrigerate overnight: Seal the jars with lids and place them in the refrigerator. Allow the oats and chia seeds to soak and soften overnight, or for at least 6-8 hours, to achieve a creamy consistency and meld the flavors.
Notes
- For a vegan option, substitute honey with maple syrup or agave nectar.
- If you prefer thicker oats, reduce the coconut milk slightly or add more chia seeds.
- Quick rolled oats are recommended for faster soaking and better texture, but regular rolled oats can be used.
- The oats can be prepared up to 2 days in advance for convenience.
- Make sure to use ripe fresh mango for the best sweetness and flavor.
- Store the overnight oats refrigerated and consume within 3 days for optimal freshness.
