Ingredients

Scale

Main Ingredients

  • 2 tablespoons olive oil
  • 2 garlic cloves, crushed
  • 1/2 tablespoon Italian seasoning
  • 1/2 teaspoon red chili flakes
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons tomato paste
  • 1/2 cup (30 g) sun-dried tomatoes, sliced
  • 1 teaspoon fresh thyme
  • 2 cans (14 oz / 400 g each) chickpeas, drained and rinsed
  • 1 cup (200 ml) vegetable stock
  • 1 cup (200 ml) coconut milk
  • 68 fresh basil leaves, roughly shredded
  • Salt and freshly ground black pepper to taste

Instructions

  1. Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the crushed garlic cloves and sauté until fragrant, about 1-2 minutes, taking care not to burn the garlic.
  2. Add Spices: Stir in the Italian seasoning, red chili flakes, and ground black pepper, cooking for another minute to release their flavors.
  3. Incorporate Tomato Paste: Add the tomato paste to the skillet and stir well to combine it thoroughly with the spices and garlic, creating a rich base.
  4. Simmer Chickpeas: Add the sliced sun-dried tomatoes, fresh thyme, drained chickpeas, and vegetable stock. Bring the mixture to a simmer, cover with a lid, and let it cook for 5 minutes to meld the flavors.
  5. Add Coconut Milk and Basil: Stir in the coconut milk and simmer for an additional minute. Then, add the fresh basil leaves for a burst of herby freshness.
  6. Season and Serve: Season the dish with salt and freshly ground black pepper to taste. Serve immediately while hot, perfect as a main or side meal.

Notes

  • Use full-fat coconut milk for a creamier texture.
  • Adjust red chili flakes according to your preferred spice level.
  • Fresh basil can be substituted with dried basil if unavailable, but fresh is recommended for best flavor.
  • Serve with crusty bread or over rice for a complete meal.
  • Leftovers store well in the refrigerator for up to 3 days.
