Ingredients

Scale

Cookie Dough

  • 1/2 cup (120g) coconut butter
  • 1/2 cup (160g) light agave or honey
  • 1 tsp vanilla extract
  • 1 1/2 cups (180g) oat flour
  • 2 tsp baking powder
  • 1 tbsp Encha Culinary Grade Matcha Powder
  • Pinch of salt

Frosting

  • 1/2 cup full fat vanilla coconut yogurt
  • 1 tsp Encha Culinary Grade Matcha Powder
  • Optional: ceremonial grade matcha powder for dusting

Instructions

  1. Preheat Oven: Preheat the oven to 350ºF (175ºC) to get ready for baking the cookies.
  2. Melt Coconut Butter and Sweetener: In a microwave-safe bowl, melt together the coconut butter and light agave or honey for about 30 seconds until fully combined and liquid.
  3. Add Vanilla Extract: Stir in the vanilla extract thoroughly to the melted mixture for added aroma and flavor.
  4. Mix Dry Ingredients: In a separate mixing bowl, whisk together the oat flour, baking powder, matcha powder, and a pinch of salt to ensure even distribution of ingredients.
  5. Combine Wet and Dry: Pour the coconut butter mixture into the dry ingredients and mix well until a consistent dough forms.
  6. Roll Out Dough: Roll the dough out to approximately 1/4 inch thickness between two sheets of wax paper to prevent sticking.
  7. Cut Shapes: Using a heart-shaped cookie cutter or any preferred shape, cut the dough into cookies.
  8. Prepare Baking Sheet: Transfer cut cookies to a baking sheet lined with parchment paper, spacing them slightly apart.
  9. Bake Cookies: Bake in the preheated oven for 10 to 12 minutes until edges are set but cookies are still soft.
  10. Cool Cookies: Allow the cookies to cool completely on a wire rack to set properly before frosting.
  11. Prepare Frosting: In a small bowl, mix the full fat vanilla coconut yogurt with 1 tsp matcha powder until thick and smooth without lumps.
  12. Frost and Serve: Spread the matcha frosting evenly over the cooled cookies. Optionally, dust with ceremonial grade matcha powder for an elegant finish. Enjoy your delicious matcha sugar cookies!

Notes

  • Using coconut butter gives a subtle coconut flavor and creamy texture, but it can be substituted with vegan butter if desired.
  • If you prefer a less sweet cookie, adjust the agave or honey quantity accordingly.
  • Ensure oat flour is gluten-free if necessary, as oats can be contaminated with gluten during processing.
  • For a stronger matcha flavor, you can increase the matcha powder slightly, but avoid going over 1 tbsp to prevent bitterness.
  • These cookies keep well in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week.
  • For frosting alternatives, you may use dairy-free cream cheese mixed with matcha powder.
  • Make sure to cool the cookies completely before frosting to prevent melting.
