Ingredients

Scale

Potatoes and Seasoning

  • 2.5 tablespoons avocado oil (divided)
  • 2 pounds red potatoes or Yukon Gold Potatoes
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika

Toppings

  • 1 chili pepper (sliced; try Fresno, Serrano or your favourite variety)
  • 1/2 bell pepper (diced; use whatever colour you like)
  • 1/2 cup chopped tomato (Roma and grape tomatoes are great options)
  • 1/2 cup crumbled feta cheese
  • 1/3 cup kalamata black olives (pitted and sliced)
  • 1/3 cup sliced cucumber
  • 1/3 cup sliced red onion
  • 1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon dried oregano

Finishing

  • 3/4 cup tzatziki sauce (or to taste, plus more for serving)
  • Fresh lemon wedges (for serving)

Instructions

  1. Preheat Oven and Prepare Pan: Heat your oven to 425°F (220°C). Grease a large sheet pan with 1/2 tablespoon of avocado oil and set it aside while you prepare the potatoes.
  2. Cut Potatoes into Fries: Clean and peel the potatoes if desired. To cut fries, slice a small piece off one long side so the potato can rest flat. Slice lengthwise into 1/4-inch to 1/2-inch thick slabs, then cut these into fry shapes. Place cut fries into a bowl of fresh water to prevent browning.
  3. Dry Potatoes: Drain the fries and place them in a clean tea towel. Pat them thoroughly dry to remove excess moisture, which helps them crisp during baking.
  4. Season Fries: In a dry bowl, toss the dried fries with the remaining 2 tablespoons of avocado oil, salt, black pepper, garlic powder, and paprika until well coated.
  5. Bake Fries: Spread the potatoes in a single layer on the prepared sheet pan. Bake in the preheated oven for 15 minutes. Remove the pan and flip the fries using a spatula to ensure even cooking. Return the pan to the oven and bake for an additional 15 to 20 minutes, or until the fries are golden brown and crispy.
  6. Season Fries (Optional): Once baked, you can sprinkle a little more salt on the fries if desired for extra flavor.
  7. Assemble Mediterranean Fries: Transfer the baked fries to a large serving dish or divide between plates. Top with sliced chili pepper, diced bell pepper, chopped tomatoes, crumbled feta cheese, sliced kalamata olives, cucumber, red onion, fresh dill, parsley, and dried oregano.
  8. Add Tzatziki and Lemon: Drizzle or dollop tzatziki sauce over the assembled fries. Serve with fresh lemon wedges for squeezing on top and additional tzatziki on the side for dipping.
  9. Enjoy: Serve immediately to enjoy the perfect combination of crispy fries with vibrant Mediterranean toppings and creamy tzatziki.

Notes

  • Using avocado oil allows for high-temperature baking and adds a mild flavor.
  • Soaking the cut potatoes briefly in water helps remove excess starch, improving crispiness.
  • Patting the fries dry is essential to get a crisp exterior.
  • You can customize the heat level by adjusting the type and amount of chili pepper.
  • Serve with extra tzatziki and lemon wedges to enhance fresh flavors.
  • Leftovers can be refrigerated and reheated in an oven to maintain crispiness.
