Ingredients

Scale

Green Beans

  • 1216 ounces fresh green beans, trimmed

Sauce

  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 ½ teaspoons granulated sugar or honey
  • 1 teaspoon cornstarch
  • 3 tablespoons water

Aromatics & Seasonings

  • 3 cloves garlic, finely minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon crushed red pepper flakes (adjust to taste)
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon sesame seeds

Instructions

  1. Prepare Green Beans: Rinse the fresh green beans thoroughly and trim the ends to keep them neat. You can also snap them by hand if preferred.
  2. Make the Sauce: In a small bowl, whisk together the soy sauce, rice wine vinegar, granulated sugar or honey, cornstarch, and water until smooth. This sauce will thicken and coat the green beans perfectly.
  3. Sauté Aromatics: Heat a large skillet over medium-high heat and add the toasted sesame oil. Once hot, add the minced garlic and ginger. Stir for about 1-2 minutes until fragrant but not browned.
  4. Cook Green Beans: Add the trimmed green beans to the skillet. Stir them around to coat with the garlic-ginger oil, cooking for about 4 minutes until they are tender yet retain a pleasant crunch.
  5. Add Sauce: Pour the prepared sauce over the green beans. Stir continuously as the sauce simmers and thickens, coating all the beans evenly for about 2-3 minutes.
  6. Season and Garnish: Stir in the crushed red pepper flakes according to your desired heat level. Finish by sprinkling the sesame seeds over the beans before serving.

Notes

  • You can substitute honey for sugar for a natural sweetness.
  • Adjust crushed red pepper flakes to control the spice intensity.
  • For a gluten-free version, use tamari or a certified gluten-free soy sauce.
  • Serve immediately for the best texture; leftovers can be reheated gently.
  • Add a sprinkle of chopped scallions or toasted almonds for additional texture.
