Instructions

  1. Preheat and grease: Preheat the oven to 350 degrees Fahrenheit. Grease the bottom and sides of a 13 x 9 inch baking dish with 1 Tablespoon of butter to prevent sticking.
  2. Prepare crumb mixture: In a food processor, combine the flour, baking soda, and salt. Pulse a few times to blend the dry ingredients. Add the butter in 1 Tablespoon pieces and pulse until the mixture is crumbly with pea-sized butter pieces throughout.
  3. Mix filling: In a medium bowl, whisk together the ricotta cheese, sugar, eggs, and vanilla extract until smooth and thoroughly combined.
  4. Assemble base: Press ⅔ of the crumb mixture firmly into the bottom of the prepared baking dish to create an even crust layer.
  5. Add filling: Pour the ricotta cheese mixture evenly over the crust layer in the dish.
  6. Top crumb layer: Sprinkle the remaining crumb mixture evenly over the ricotta filling to create a crumbly top layer.
  7. Bake: Bake in the preheated oven for 35 to 40 minutes, until the top is lightly golden and the filling is set.
  8. Cool and serve: Allow the bars to cool for 10 minutes before cutting into pieces. Handle gently as they are delicate and tender.
