- 1 Tablespoon butter (for greasing the baking dish)
Filling:
- 2 cups ricotta cheese (1 lb)
- ¾ cup granulated sugar
- 4 eggs
- 1 teaspoon vanilla extract
- Preheat and grease: Preheat the oven to 350 degrees Fahrenheit. Grease the bottom and sides of a 13 x 9 inch baking dish with 1 Tablespoon of butter to prevent sticking.

- Mix filling: In a medium bowl, whisk together the ricotta cheese, sugar, eggs, and vanilla extract until smooth and thoroughly combined.
- Assemble base: Press ⅔ of the crumb mixture firmly into the bottom of the prepared baking dish to create an even crust layer.
- Add filling: Pour the ricotta cheese mixture evenly over the crust layer in the dish.
- Top crumb layer: Sprinkle the remaining crumb mixture evenly over the ricotta filling to create a crumbly top layer.
- Bake: Bake in the preheated oven for 35 to 40 minutes, until the top is lightly golden and the filling is set.
- Cool and serve: Allow the bars to cool for 10 minutes before cutting into pieces. Handle gently as they are delicate and tender.
