Steak Bites
- 12 oz steak (ribeye, sirloin, or filet mignon), cut into bite-sized pieces
- Salt and black pepper, to taste
- 2 tbsp olive oil
Pasta and Sauce
- 8 oz shell pasta
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt and black pepper, to taste
- Reserved pasta water, as needed
- 2 tbsp fresh parsley, chopped (optional)
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the shell pasta and cook until al dente, about 8-10 minutes. Reserve a cup of pasta water, then drain the pasta and set aside.
- Prepare the Steak Bites: Season the bite-sized steak pieces generously with salt and black pepper. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the steak bites and sear them until browned on all sides and cooked to your preferred level of doneness, about 3-4 minutes. Remove from the skillet and set aside.
- Make the Sauce: In the same skillet, reduce heat to medium and add 3 tablespoons of unsalted butter. Once melted, sauté 4 cloves of minced garlic until fragrant, about 1 minute. Slowly pour in 1 cup of heavy cream and add 1 cup of freshly grated Parmesan cheese. Stir continuously until the cheese melts and the sauce thickens slightly, about 3-4 minutes. Season with salt and black pepper to taste.
- Combine Pasta and Sauce: Add the cooked pasta to the skillet with the creamy sauce. Toss to coat evenly, adding reserved pasta water a little at a time to loosen the sauce if needed for a silky consistency.
- Serve: Plate the creamy pasta and top with the seared steak bites. Garnish with chopped fresh parsley if desired. Serve immediately and enjoy your savory steak bites and pasta dish!
Notes
- Use steak cuts like ribeye, sirloin, or filet mignon for tender and flavorful results.
- Adjust the pasta water quantity to achieve your preferred sauce consistency.
- For extra flavor, add a pinch of red pepper flakes with the garlic while sautéing.
- Parmesan cheese can be substituted with Pecorino Romano for a sharper taste.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
