Steak Bites

Pasta and Sauce

  • 8 oz shell pasta
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt and black pepper, to taste
  • Reserved pasta water, as needed
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the shell pasta and cook until al dente, about 8-10 minutes. Reserve a cup of pasta water, then drain the pasta and set aside.
  2. Prepare the Steak Bites: Season the bite-sized steak pieces generously with salt and black pepper. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the steak bites and sear them until browned on all sides and cooked to your preferred level of doneness, about 3-4 minutes. Remove from the skillet and set aside.
  3. Make the Sauce: In the same skillet, reduce heat to medium and add 3 tablespoons of unsalted butter. Once melted, sauté 4 cloves of minced garlic until fragrant, about 1 minute. Slowly pour in 1 cup of heavy cream and add 1 cup of freshly grated Parmesan cheese. Stir continuously until the cheese melts and the sauce thickens slightly, about 3-4 minutes. Season with salt and black pepper to taste.
  4. Combine Pasta and Sauce: Add the cooked pasta to the skillet with the creamy sauce. Toss to coat evenly, adding reserved pasta water a little at a time to loosen the sauce if needed for a silky consistency.
