Main Ingredients
- 1 (15 oz) can chickpeas, drained and rinsed
- 1/2 cup almond flour
- 2 tablespoons sun-dried tomato paste (or 1/4 cup sun-dried tomatoes)
Seasonings & Others
- 2 tablespoons olive oil (plus 1 tablespoon reserved for brushing)
- 3/4 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1/4 cup Italian seasoned breadcrumbs (gluten-free optional)
- Combine Ingredients: Place all ingredients except 1 tablespoon of the olive oil and the breadcrumbs into the bowl of a food processor. Pulse to combine, scraping down the sides between pulses. Add water 1 teaspoon at a time if the mixture is too dry, then add breadcrumbs and pulse until fully combined. Transfer to a mixing bowl.
- Chill the Mixture: Cover the bowl and refrigerate the mixture for at least 30 minutes to allow it to firm up for easier shaping.
- Preheat Oven: Remove the mixture from the refrigerator. Preheat your oven to 400° F (205° C) and lightly spray a baking sheet with cooking spray to prevent sticking.
- Form Patties: Using a 1/3 cup measuring cup, scoop and shape the mixture into 3-4 even-sized patties about 1/2 inch thick. Place the patties on the baking sheet and brush both sides with the reserved olive oil.
- Bake Patties: Bake for 35-40 minutes, turning the patties halfway through the cooking time to ensure even browning. Once baked, remove and let them cool for at least 5 minutes.
