Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts (about 6 ounces each)
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup all-purpose flour
  • 5 tablespoons unsalted butter, cut into slices, divided

Seasoning & Broth

  • 1 packet Good Seasons Italian Dressing Seasoning Mix
  • 1/2 cup fresh lemon juice
  • 3/4 cup low-sodium chicken broth

Instructions

  1. Prepare Slow Cooker: Coat a 6-quart slow cooker with nonstick spray to prevent sticking and ensure easy cleanup.
  2. Season the Chicken: Season the chicken breasts evenly on both sides with salt, pepper, and garlic powder. Then, lightly dredge each piece in flour, shaking off any excess to create a light coating.
  3. Sear the Chicken: Melt 1 tablespoon of butter in a large nonstick pan over medium-high heat. Once the butter is bubbly, add the chicken breasts and sear for 3 minutes per side until they develop a golden brown crust.
  4. Transfer and Season: Move the seared chicken to the slow cooker. Sprinkle the Italian dressing seasoning mix evenly over each breast. Slowly pour the fresh lemon juice and low-sodium chicken broth over the chicken. Distribute the remaining butter slices evenly on top.
  5. Cook: Cover the slow cooker with the lid and cook on low heat for 4 hours, or until the chicken is cooked through and reaches an internal temperature of 165°F. Avoid overcooking to keep the chicken moist and tender.
  6. Serve: Gently slice or shred the chicken. Serve over cooked rice and your favorite roasted vegetables. Drizzle some of the flavorful lemon broth from the slow cooker over the chicken before enjoying your meal.

Notes

  • Use fresh lemon juice for the best bright and tangy flavor.
  • Don’t skip searing the chicken; it adds important flavor and color.
  • Ensure chicken reaches an internal temperature of 165°F to ensure it is safe to eat.
  • Serve with rice or crusty bread to soak up the delicious lemon broth.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • To prevent dryness, avoid cooking chicken for longer than recommended in the slow cooker.
