Wet Ingredients
- 2/3 cup milk of choice
- 1 1/2 tsp white or cider vinegar
- 2 1/2 tbsp oil (or banana, applesauce, or almond butter for oil-free)
- 1 tsp pure vanilla extract
Dry Ingredients
- 1 cup spelt, white, or oat flour
- 1 1/2 tsp baking powder
- 1/2 cup sugar (or xylitol for sugar-free)
- 1/4 tsp salt
Topping
- Powdered sugar or sugar-free powdered sugar
- Prepare Wet Ingredients: In a small bowl, whisk together the milk, vinegar, oil, and vanilla extract until well combined. Set aside to allow the vinegar to slightly curdle the milk, which will help the donuts have a light texture.
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a mini or regular donut pan or alternatively, a mini muffin tin, to prevent the donuts from sticking.
- Mix Dry Ingredients: In a large bowl, combine the flour, baking powder, sugar, and salt. Stir these dry ingredients well to ensure even distribution.
- Combine Wet and Dry: Pour the wet mixture into the dry ingredients and gently stir until just combined. Avoid overmixing to keep the donuts tender and fluffy.
- Fill the Pan: Immediately pour the batter into the prepared donut pan, filling each mold evenly. If using a mini muffin tin, fill each cup to about 3/4 full.
- Bake: Place the pan in the preheated oven and bake for 8 minutes until the donuts have risen and a toothpick inserted into the center comes out clean.
- Cool Completely: Remove the baked donuts from the oven and allow them to cool completely in the pan before attempting to remove them to avoid breaking.
- Add Powdered Sugar Topping: Pour powdered sugar into a deep bowl and either dip each donut into the sugar or sprinkle it evenly over the tops. This will give your donuts their classic snowball appearance and add a sweet finishing touch.
Notes
- You can substitute oil with mashed banana, applesauce, or almond butter for an oil-free version.
- Using vinegar with milk creates a buttermilk effect, contributing to a lighter texture.
- Spelt, white, or oat flour can be used based on dietary preference or availability.
- For sugar-free donuts, replace sugar with xylitol and use sugar-free powdered sugar for topping.
- Ensure donuts are completely cool before removing from the pan and adding the powdered sugar to prevent melting.
