Pastry
- 1 sheet of puff pastry (store-bought or homemade)
Filling
- 1 cup fresh spinach, chopped (or frozen, thoroughly drained)
- ½ cup feta cheese, crumbled
- ¼ cup cream cheese, softened
- 1 tablespoon olive oil
- 1 clove garlic, minced
- ¼ teaspoon dried oregano
- Salt and pepper to taste
Finishing
- 1 egg, beaten (for egg wash)
- Prepare the Spinach Filling: Heat olive oil in a pan over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in the spinach and cook until wilted or until moisture evaporates if using frozen spinach. Remove from heat and allow the mixture to cool completely.
- Mix the Cheese Blend: In a bowl, combine the cooked spinach, crumbled feta, softened cream cheese, dried oregano, salt, and pepper. Stir everything together until the mixture is well blended and smooth.
- Assemble the Twists: Unroll the puff pastry sheet on a lightly floured surface. Spread the spinach and cheese mixture evenly over one half of the pastry sheet. Fold the other half of the sheet over the filling to create a rectangle. Gently press down the edges to seal the filling inside.
- Cut & Twist: Cut the folded pastry into 1-inch wide strips. Holding each strip at both ends, gently twist it several times to form a spiral. Lay each twisted strip onto a parchment-lined baking sheet, spaced slightly apart.
- Egg Wash & Bake: Brush each puff pastry twist with the beaten egg to give a glossy, golden finish. Bake in a preheated oven at 375°F (190°C) for 15 to 20 minutes or until the pastry is puffed up and golden brown. Remove from oven and let cool slightly before serving.
Notes
- For best results, thaw the puff pastry sheet completely before using.
- Make sure to drain frozen spinach well to avoid soggy pastry.
- Feel free to add a pinch of nutmeg to the filling for extra warmth.
- These twists are best served fresh but can be reheated in a toaster oven.
- Use a sharp knife or pizza cutter to slice the pastry strips cleanly.
