  • 1/3 cup water
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the topping mixture: In a bowl, mix old fashioned oats, brown sugar, flour, cinnamon, and melted butter just until the mixture forms a crumbly texture. Then, spread half of this mixture evenly into the bottom of a greased 9×9 inch baking pan to create the crust base.
  2. Add fruit layer: Spread the peeled and sliced peaches along with the sliced strawberries evenly over the oat crust in the pan.
  3. Make the syrup: In a small saucepan over medium-high heat, combine brown sugar, cornstarch, salt, and water. Cook while stirring constantly until the mixture thickens, which should take only a couple of minutes. Be careful not to burn it.
  4. Add vanilla and pour syrup: Remove the saucepan from heat, stir in the vanilla extract, and then pour the syrup evenly over the fruit layer in the pan.
  5. Add remaining topping: Sprinkle the remaining half of the oat topping mixture over the syrup-covered fruit to cover the entire surface.
