  • 1/4 cup chopped fresh parsley

Instructions

  1. Prepare Mushrooms: Remove the stems from the mushrooms and finely mince the stems. Place the mushroom caps rounded-side down on a lightly oiled rack in a broiling pan and set aside.
  2. Drain Clams: Drain the minced clams, reserving the clam liquid for later use in the filling mixture.
  3. Melt Butter: In a large skillet over medium heat, melt the unsalted butter.
  4. Brush Mushrooms: Brush some of the melted butter onto the mushroom caps to infuse them with flavor before filling.
  5. Sauté Filling: In the remaining butter in the skillet, add the minced mushroom stems, garlic, and reserved clam liquid. Simmer and cook for 4 to 6 minutes, until the mushroom stems are tender.
  6. Combine Filling: Stir in the minced clams, breadcrumbs, chopped parsley, salt, and black pepper into the sautéed mixture until well combined.
  7. Stuff Mushrooms: Spoon the clam mixture evenly into the mushroom caps, filling each cavity.
  8. Broil Mushrooms: Place the broiling pan in the oven and broil the stuffed mushrooms for 7 to 9 minutes, or until the mushrooms are tender and the stuffing is browned and slightly crisp.
