Sweet Potatoes
- 4 sweet potatoes, peeled and sliced into 1-inch rounds (about 2 lbs)
- ¼ cup butter, melted
- ½ teaspoon salt
Toppings
- 2 tablespoons maple syrup
- About 12 regular-sized marshmallows, halved
- About 24 pecan halves
- Preheat and prepare baking sheet: Preheat your oven to 425°F (220°C) and grease a sheet pan with butter or nonstick spray to prevent sticking.
- Coat sweet potatoes: Place the sweet potato rounds on the prepared pan. Drizzle the melted butter evenly over them and toss to coat all pieces thoroughly. Sprinkle the salt over the potatoes to season.
- Roast sweet potatoes: Roast the sweet potatoes for about 20 minutes. Then, flip each round so the browned side is on top, and roast for an additional 15-20 minutes until the potatoes are fork tender.
- Change oven setting: Remove the pan from the oven and lower the oven temperature to broil, preparing for the marshmallow toasting step.
- Add maple syrup and marshmallows: Drizzle the roasted sweet potatoes with maple syrup and gently toss to coat. Place halved marshmallows on top of each sweet potato round.
- Broil marshmallows: Broil the marshmallow-topped sweet potatoes for 1-3 minutes, watching closely until the marshmallows are lightly toasted and golden but not burnt.
- Add pecans and serve: Immediately after removing the sweet potatoes from the oven, press a pecan half into the top of each toasted marshmallow. Serve these bites right away for the best texture and flavor.
Notes
- Keep a close watch when broiling marshmallows to prevent burning.
- You can use fresh or frozen sweet potatoes; if frozen, allow them to thaw before cooking.
- For a vegan version, substitute butter with coconut oil and use vegan marshmallows.
- These bites are best served warm, as marshmallows firm up when cooled.
- Add a sprinkle of cinnamon or nutmeg to the sweet potatoes before roasting for extra warmth and flavor.
