Ingredients

Scale

Vegetables & Mix-ins

  • 4 cups cabbage, shredded
  • 1½ cups carrots, shredded (~5 large carrots)
  • 1 red bell pepper, thinly sliced
  • 1 cup edamame, cooked and shelled
  • ½ cup fresh cilantro, chopped
  • ½ cup green onions, chopped
  • ½ cup honey-roasted peanuts
  • 1 cup wonton strips

Wraps

  • 5 Flatout Sea Salt and Black Pepper tortilla wraps

Peanut Sauce

  • 2 Tbsp rice vinegar
  • 1 Tbsp soy sauce
  • 1 Tbsp lime juice
  • 1 Tbsp honey
  • 1 tsp garlic, minced
  • ¼ cup peanut butter
  • ½ tsp salt
  • ½ tsp crushed red pepper flakes

Instructions

  1. Prepare the Peanut Sauce: In a medium bowl, whisk together rice vinegar, soy sauce, lime juice, honey, and minced garlic until well combined. Add peanut butter, salt, and crushed red pepper flakes, then stir until the mixture is smooth and creamy.
  2. Mix the Wrap Ingredients: In a large bowl, combine shredded cabbage, shredded carrots, thinly sliced red bell pepper, cooked and shelled edamame, chopped fresh cilantro, chopped green onions, honey-roasted peanuts, and wonton strips. Toss everything together until evenly mixed.
  3. Assemble the Wraps: Divide the vegetable and peanut mixture evenly among the five tortilla wraps. Drizzle each with the prepared peanut sauce to taste.
  4. Roll and Serve: Carefully roll up each flatbread wrap tightly. Cut each wrap in half diagonally before serving for easier handling and a pleasing presentation.

Notes

  • Shred cabbage finely for better texture and easier rolling of wraps.
  • You can substitute peanut butter with almond butter for a different flavor.
  • Wonton strips add a delightful crunch but can be omitted for a gluten-free version; substitute with gluten-free crunchy elements.
  • Adjust crushed red pepper flakes according to your preferred spice level.
  • Serve these wraps immediately to keep the wonton strips crunchy, or add them just before serving.
