Ingredients

Scale

For the Pizza Base and Toppings

  • 2 naan breads
  • 2 cups cooked chicken, shredded
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cup shredded mozzarella cheese
  • Olive oil for drizzling

For the Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • 1 cup cucumber, grated and drained
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) to prepare it for warming the naan breads and baking the pizzas.
  2. Make the Tzatziki Sauce: In a small bowl, combine the plain Greek yogurt, grated and drained cucumber, chopped fresh dill, lemon juice, salt, and pepper. Mix well until smooth and set aside to let the flavors meld.
  3. Warm the Naan: Place the naan breads on a baking sheet and drizzle a little olive oil over each. Put them in the preheated oven for about 5 minutes to warm and slightly crisp the base.
  4. Add Chicken and Vegetables: Remove the naan from the oven and evenly spread the shredded cooked chicken over each. Then sprinkle the shredded mozzarella cheese on top, followed by halved cherry tomatoes and thinly sliced red onion.
  5. Bake the Pizzas: Return the topped naan pizzas to the oven and bake for 10-12 minutes or until the cheese is fully melted and bubbly, and the edges of the naan are golden and crisp.
  6. Top with Tzatziki and Serve: Once baked, spoon generous amounts of the prepared tzatziki sauce over each pizza. Garnish with extra fresh dill if desired, then slice and serve immediately.

Notes

  • Make sure to drain the grated cucumber well to prevent watery tzatziki sauce.
  • Use cooked chicken from leftovers or rotisserie for convenience.
  • You can substitute naan with pita bread for a slightly different texture.
  • For extra flavor, add a sprinkle of crushed red pepper or kalamata olives if desired.
  • Best served fresh; reheat leftovers in a toaster oven to maintain crispiness.
