  • 1 teaspoon red pepper flakes

Instructions

  1. Rinse the Feta: Break the block of feta cheese into about 8 pieces and place them in a fine mesh strainer. Rinse briefly under cold water to remove some of the saltiness (this step is optional). Allow the feta to drain well.
  2. Prepare Hot Honey: In a small saucepan, combine the honey and red pepper flakes. Warm the mixture over medium heat until the honey begins to simmer. Remove from heat and let it cool while you prepare the dip.
  3. Whip the Feta: Transfer the drained feta to a food processor bowl. Add fresh lemon juice and whole milk (or Greek yogurt). Process until the texture resembles ricotta or cottage cheese. With the processor running, slowly drizzle in the olive oil. Scrape down the sides and process again until the mixture is smooth and creamy, similar to Greek yogurt in consistency. Transfer to a serving bowl.
  4. Garnish and Serve: Using a spoon, create a swirl pattern in the whipped feta. Drizzle the cooled hot honey evenly over the top. Sprinkle the chopped pistachios as a garnish. Serve immediately with toasted baguette slices.
