Instructions

  1. Prepare the Blueberry Yogurt Mixture: Begin by lining a baking sheet with parchment paper to prevent sticking. In a medium bowl, mix together the fresh blueberries, chopped walnuts, and vanilla Greek yogurt until well combined. This mixture forms the base of your clusters.
  2. Form and Freeze the Clusters: Using a spoon, scoop approximately 2 tablespoons of the blueberry yogurt mixture to form individual clusters. Place each cluster onto the prepared baking sheet, leaving space between each one. Transfer the baking sheet to your freezer and allow the clusters to freeze for 1 to 1.5 hours, or until firm.
  3. Melt the Chocolate Coating: About 10 minutes before the clusters are done freezing, melt the dark chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second increments, stirring between each until fully melted and smooth. Let the melted chocolate cool for about 5 minutes so it’s not too hot to coat the clusters.
  4. Coat the Clusters with Chocolate: Once the yogurt clusters are firm, remove them from the freezer. Using two forks, carefully dip each frozen cluster into the melted chocolate ensuring full coverage. Place the coated clusters back onto the parchment-lined baking sheet. Sprinkle each cluster with flaky sea salt to enhance flavor if desired.
  5. Set the Chocolate and Store: After coating all clusters, return them to the freezer or refrigerate for an additional 10 minutes to allow the chocolate shell to harden. Store frozen or refrigerated until ready to serve.
