These healthy and delicious Zucchini Cookies combine wholesome rolled oats, creamy peanut butter, ripe bananas, and shredded zucchini to create a naturally sweet, soft, and moist treat. Instructions

  1. Preheat the Oven: Preheat your oven to 180°C (350°F). Line a large baking tray or cookie sheet with parchment paper to prevent sticking.
  2. Mix Ingredients: In a large mixing bowl, combine the rolled oats, peanut butter, mashed bananas, and shredded zucchini. Stir well until all ingredients are evenly incorporated. If desired, fold in chocolate chips at this stage.
  3. Shape Cookies: Form the mixture into 16 equal-sized balls. Place them on the prepared baking tray and gently press each ball down to form a cookie shape. Optionally, sprinkle extra chocolate chips on top.
  4. Bake: Bake the cookies in the preheated oven for 12-15 minutes, or until the edges turn golden brown.
  5. Cool: Allow the cookies to cool on the baking tray for 10 minutes to set, then transfer them to a wire rack to cool completely before serving.
